Kama-meshi is a dish where various ingredients are thrown in together with the rice as it steams, allowing the fragrance of the added ingredients to infuse with the rice. Only fresh seasonal ingredients are used at Hatsune, making this one of those “do try” dishes. The kinmedai (alfonsino or golden eye perch) kama-meshi is so popular that you need to make an order in advance!
