An old elementary school building has been repurposed into a sushi making school! The ambiance of the school is still in tact with photos of former principles lining the hallways and preserved school furniture.
At this authentically local site learn how to make various kinds of inaka (country style). Usually made from mountain vegetables like shiitake mushrooms and bamboo shoots, country style sushi is a regional dish in Kochi and varies from town to town and family to family.
Grilled and flaked mackerel can be added to sweetly seasoned rice. Sometimes a yuzu flavour is also added to the rice before it is moulded into a variety of shapes with a thin omlette, fried tofu skins (known as inari sushi), or different mountain vegetables. Extra sushi can be packed and taken home. It is recommenced to gently sear the top of leftover country style sushi for an entirely new flavour.
