Ryukyu

Do you remember our article about inaka-sushi?

This time, we would like to present to you a very unique ingredient of inaka-sushi called "Ryukyu". 

Also called hasu-imo in other regions of Japan, ryukyu is the stem of a certain mountain potato called satoimo, from which only the stem is eaten. The stem contains cavities and has a crispy texture. If you soak it in yuzu vinegar, which is a classic seasoning of country sushi, it will add a good flavor. 

It has also the peculiarity of measuring 1.5 meters to 3 meters in height (between 3.2 and 9.2 feet), which means that it can be easily taller than most of us. Amazing, isn't it?
