Inaka-sushi

In the mood for veggies? Try Kochi's vegetable sushi! 

Did you know that vegetable sushi is one of the traditional food in Kochi Prefecture? It is called Inaka-sushi, which means "countryside sushi". Instead of fish, various vegetables such as shiitake mushrooms, devil's tongue (konnyaku), Japanese ginger (myoga) or bamboo shoots are used. The sushi rice is traditionally flavored with rice vinegar, but yuzu vinegar is used in Kochi. Soy sauce is not needed. 

If we had to recommend one vegetable in particular, we would strongly suggest that you try bamboo shoot sushi. It is not only particularly mild and tasty, but also contains plenty of nutrient components and is low in sugars and fat.
