Directly translated to ‘countryside sushi’, this dish is the creative invention of communities that lived among Kochi’s mountainous regions and consequently, didn’t have access to seafood
Anybody, including vegetarians and vegans (in most cases), can enjoy the delightful flavors of inaka-sushi. Besides, it’s the perfect way to explore the world of Kochi’s delicious and rare veggies such as ryukyu (stem of a mountain potato plant) and shihochiku (bamboo shoot). In fact, shihochiku is an autumn ingredient, currently in season!
