Make your own katsuo no tataki

When people ask us what should they eat in Kochi, we always that they should try katsuo no tataki (seared bonito) since it’s the #1 soul food here. You can find tataki at izakaya (Japanese pubs), restaurants, or even at  supermarkets, but the most fun way to enjoy the dish is to cook it yourself!  At Katsuobune Tosa Tataki Dojo, you can sear a freshly caught bonito yourself! (Don’t worry, experienced staff will help you all the way through)

1. Choose your fresh bonito, and place on a skewer
2. Sear the bonito over open straw flame
3. Staff will tell you when it’s done and slice the bonito for you!
4. Put your favorite toppings on your plate ( fresh chives, sliced onions, sliced garlic, Japanese ginger, seaweed, and citrus juice are some local favorites)
5. Enjoy your own freshly cooked tataki fresh off the flame!

Since the bonito is very fresh, it doesn’t have a strong fishy smell. You can just put some salt and wasabi on it to enjoy the original smokiness and umami! One tip to make your tataki extra delicious is to sear the skin side of the bonito well and the other side rather lightly
