Sawachi cuisine

Sawachi cuisine, a regional specialty of Kochi.

As the end-of-year festive season is approaching, it is about time to introduce Kochi's traditional platter of seafood and mountain food, Sawachi!

Commonly prepared to celebrate New Year and other important occasions, Sawachi cuisine is not just one specific dish.

It is actually composed of several kind of dishes served on a 36cm to 39cm platter, such as sashimi, bonito sashimi, standard sushi, inaka-sushi (Kochi's vegetable sushi), steamed sea bream, somen noodles and fruit. 

Traditionally, men are in charge of preparing the fish and women have to cook it. It can take up to 2 days to prepare all the dishes of this platter!

Everyone in the family has to help cook, serve, and clean up the dishes.

Sawachi cuisine has been prepared in Kochi Prefecture since the feudal era.

The platter used to be served at the end of a samurai feast, and was a symbol of high social status.

It is now used throughout Kochi as a cuisine for “Okyaku” (banquet held for guests).
