Located in the beautiful town of Kuroshio, Saltybe is one of Japan’s only places that exclusively specialize in making 100% sun-dried salt (without using firepower). While you’re in town, I highly recommend heading over to Michi-no-Eki Bios Ogata to savor Kochi’s soul food…katsuo no tataki (seared bonito)! Not to mention, it’s topped with a sprinkle of delicious sun-dried salt–just like the one you would experience making at Saltybe! Another dish worth trying is the burger version offered there, featuring seared bonito sandwiched between buns (that incorporate bonito flakes in the dough), with tomato and other veggies as well as a creamy tartar sauce–an innovative and delicious twist to a classic Kochi dish!
