Along the crystal-clear Shimanto River, you can find local fishermen using traditional techniques such as shibazuke to catch unagi, where long leaves are bundled into handmade traps and submerged in the water✨

If you’re in the area, be sure to stop by the over 50-year-old restaurant Shimantoya, where you can savor unagi that has come straight from the emerald blue Shimanto River. It doesn't get any fresher than this!????
