Inaka sushi or countryside sushi is a colourful regional cuisine made of mountain vegetables like shiitake mushrooms, myoga ginger, bamboo shoots, konnyaku potato, and the leaf stocks of herb known as giant elephant ear. These ingredients are paired with sushi rice seasoned with vinegar and yuzu vinegar.
The lessons are run by friendly local obachans (elderly women) part of certified club known as “Tosa Inaka Sushi Folklore.” They patiently teach the traditional way to make delicious and vibrant inaka sushi.
Lessons available by reservation only on the Motto Kochi website. Upon arriving at Kochi Station, visit the Toasatera Information Center on the South side of the station to register, then take a taxi from the station to the lesson.
