Tosa Hachikin-jidori (chicken)
Kochi Prefecture is a “kingdom” of chickens, producing about a quarter of all chickens raised in Japan. “Hachikin-jidori,” a homebred chicken from Kochi Prefecture, contains less fat than commercially available ordinary broiler chickens. The meat is characterized by a plain but sweet taste stemming from its constituent elements. It is recommended to salt and grill the legs, lightly roast the breast meat, and eat the breast tenderloin raw as sashimi.
