“Kinmedai” (alfonsino) that grow in the waters off Muroto, known for its deep sea water used for mineral water, have a splendid red color. The fish are at their best in winter when they put on fat the most. They are characterized by bland- and subtle-tasting white meat. Among famous dishes of the fish is “kinme-don” or a bowl of rice topped with sashimi (sliced raw fish), and teriyaki (broiled with soy sauce) of the fish together with sashimi of other local fishes in season. After eating half of it, you can put kinmedai soup stock on it to make it even tastier.
